On chilly days in Wisconsin, I love warming up with a bowl of soup. I phoned my mom today and told her that I was growing tired of plain broth soups and I wished that there was a low carb cream of tomato soup; and the soup would be nice with a grilled cheese sandwich made with “bread” that was not “eggy.” My mom, who also follows a high fat and low carb way of eating responded, “Why couldn’t you make a cream of tomato soup? I have a great recipe for a low carb bread too.”
After talking for a little bit this is what we came up with:
Low Carb Tomato Soup (makes 2 servings) (3.2g net carbs per serving)
- 1/2 Cup- Hunts Tomato Sauce (6 net carbs)
- 2 Cups- Heavy Whipping Cream (0 net carbs)
- 2 T- Parmesan Cheese (0.4g net carbs)
- Salt and Pepper to taste
Whisk the ingredients together and heat up. While the Soup is cooking, make your low carb bread for a grilled cheese sandwich.
Low Carb Bread (makes 1 serving) (3.55 net carbs per serving)
- 1 1/2 T- Butter (0g net carbs)
- 3 T- Almond Flour (2.25 net carbs)
- 1- Egg (0.6g net carbs)
- 1/2 Tsp.- Baking Powder (0.7g net carbs)
Using a plastic glad-ware or zip-lock type container, melt the butter in a microwave. When the butter is melted, put all of the other ingredients in the container and whisk the ingredients. Microwave for 90 seconds. Slice the bread to make two pieces. Use the bread to make a grilled cheese sandwich.
I used about 2 ounces of cheddar cheese for the grilled cheese sandwich (0.8g net carbs).
The total net carbs for the sandwich and one serving of tomato soup was 7.55 net carbs!!!
My picture may not be fancy or photo-shopped, but this quick warm meal hit the spot!
